Mike’s Cooking Corner: Veggie Burgers and Onion Rings

About a week ago Christine and I decided to make a pretty drastic life change, we decided that we’ve had enough of meat and that we would give a plant based diet a shot, let me be clear we are not going vegan…just no chicken, Beef, Pork, or fish. Now that I’ve gotten that out of the way we can get to what made this meal so great.

We started out by getting the basic burger fixings, and elevated it by sweating some mushrooms and onions…that’s right I’m a mushroom guy now. Pro tip, throw a little low sodium soy sauce in there as they are cooking to give the veggies a nice little salty twist.

I should probably clarify that I didn’t make the onion rings or veggie burgers, they came frozen. For the veggie burgers we like the Aldi brand as they are affordable and pretty good for what they are. As the veggies are sweating preheat your oven to 400 and put those g dang veggie burgers in for 12 minutes (flip half way through

I added cheese to my burger after it was done cooking because I need some source of calcium dammit. The cheese may have made all the difference, but I’ll get to that later

I used a brioche bun which was excellent, always go brioche, you won’t be disappointed. And slathered it with a little garlic Mayo that we purchased from our local butcher (Butcher on the Block, Lake in the Hills Illinois) and of course the burger came next followed by some lettuce, spicy ketchup, and the mushrooms and onions

Final product. You may be noticing the Whataburger ketchup (thanks Dad) and for good reason. Spicy ketchup is infinitely better than regular ketchup. And should be used in more dishes. Now let’s get down to the nitty gritty…Taste, not great Bob. This burger would be infinitely better if I used a different veggie burger or maybe meat lol. Everything else worked but the worst part about this meal was easily the veggie patty itself. I only got through 3/4 of the burger before I decided it was enough.

So if you decide to replicate this meal feel free to substitute anything on this dish to make it your own, but always remember to stay hungry and live happy. No matter if it’s meat or not, do you and fuck anyone who doesn’t agree
